Vodka Pasta with Meatballs

Juicy homemade meatballs made with ground beef, swimming in creamy vodka sauce, tossed with pasta and topped with all the good stuff. She’s hearty, saucy, and definitely not shy.

Ingredients:


For the Meatballs:

    •    1 lb ground beef

    •    1 cup Italian-style breadcrumbs

    •    1 egg

    •    2–3 tbsp grated Parmesan

    •    2 tsp soy sauce

   •    1/2 cup heavy cream

    •    1 tbsp cornstarch

•   Fresh chopped parsley

    •    Olive oil spray (for baking)

•   Seasonings of choice - (I used Italian, Smoked Paprika Garlic Powder, Garlic Salt and Black Pepper)


For the Vodka Sauce:

    •    1 jar marinara sauce

    •    1/3 cup vodka

    •    1/2 cup heavy cream


For Serving:

    •    A box of your favorite pasta (I used Campanelle)

    •    Grated Parmesan

    •    Chopped parsley

    •    Thai chili flakes (If you like spicy like me)

•   1 whole burrata if you're feeling adventurous



🔥 Instructions:


1. Make the Meatballs:

    •    In a bowl, combine ground beef, breadcrumbs, egg, Parmesan, soy sauce, seasonings, heavy cream, and cornstarch.

    •    Mix until everything is just combined — don’t overwork it!

    •    Roll into meatballs and place on a lined baking sheet.

    •    Spray with olive oil spray and bake at 350°F for 15–20 minutes, depending on size.


2. Make the Vodka Sauce:

    •    In a pot, add the vodka and simmer for 1–2 minutes.

    •    Stir in marinara and simmer gently.

    •    Add heavy cream and stir until smooth and pink and glorious.


3. Bring it all together:

    •    Add baked meatballs to the sauce and simmer another 5 minutes.

    •    Cook pasta according to package directions. Serve each dish with how much pasta you would like and top with the sauce and meatballs.



Top It Off:

Sprinkle with:

    •    Parmesan Cheese

    •    Fresh chopped parsley

    •    Thai chili flakes (optional)

•   One whole burrata (optional)
