Creamy Bacon Gnocchi Soup

It's creamy, it's dreamy, it's perfect for this cold season!!
🥓 Creamy Bacon Gnocchi Soup
Ingredients
Bacon + Roux
• 10–12 bacon slices
• 3 tbsp bacon fat
• 3 tbsp flour
Liquid
• 2–3 cups chicken stock
• 2-3 cups half & half
Veggies + Flavor
• 1–2 onions, diced
• 2 garlic cloves, minced
• 2-3 sprigs fresh thyme
• Italian seasoning
• smoked paprika
• pinch red pepper flakes
• black pepper
• Tony’s Creole seasoning (start light, add to taste)
Cheese + Pasta
• 1–2 cups cheddar cheese
• 16 oz gnocchi
Instructions
1. Cook bacon until crispy. Chop & set aside.
2. Leave 3 tbsp bacon fat in the pot.
3. Whisk in flour to make a roux.
4. Slowly pour in chicken stock, whisking smooth.
5. Add half & half. Stir.
6. Add onion, garlic, thyme & seasonings.
7. Add cheddar and melt completely. Save some to top.
8. Add bacon (save some to top)
9. Add gnocchi and simmer 5–7 minutes.
Turn heat off and let it sit-it thickens naturally as it cools.
If too thick → more chicken stock
If too thin → simmer uncovered a few min
Top each bowl with shredded cheese and bacon!
